An unexpected journey
My first trip to Mexico was late 2019. The pandemic turned it into a whole year there, travelling from Nuevo León and Sinaloa to Jalisco, Mexico City and the Yucatán, eating at every market and street corner along the way.
I came home wanting to change how London sees Mexican food: away from fajita kits and fake queso, towards real, hearty food with fresh ingredients and an abundance of flavour.
